The Chantry Modern involves two butcers’ steels, the same hardness, temper and cut as a professional steel. The steels are set at the optimum angle for sharpening and are spring loaded so as not to damage a knife. It will sharpen any blade, plain or scalloped, carbon or stainless steel, imparting tiny serrations that act like sharp teeth. Available in a variety of colours.
