This combination stone comprises two different layers, one rough side for preliminary sharpening and one smooth for a fine sharpening process. If you were to use this stone on a regular basis then you would only need to use the smooth side as it give a light maintance finsh.
The rough side is needed to re-sharpen blunt knives or to correct similar damages to the cutting edge.
Always soak the whetstone for at least five minutes before starting and keep the stone wet as this ensures the best results.
