Wusthof 14cm Boning Knife (WT4602)
De-boning chicken or ham, trimming fat and sinews. The tapered, pointed blade is a necessity for working closely around joints.
WÜSTHOF knives are produced from only the finest of original,
select materials. All knives are precision forged from a single piece of high-carbon no-stain with bolster and full tang. They are perfectly balanced for effortless cutting without fatigue. A full bolster/finger guard for safety and protection is implemented. The tempered blades at 56° Rockwell are very hard and designed for durability and sturdiness. They are also laser-controlled for that extra sharp cutting edge. Ergonomic handles have been developed in consultation with professional chefs.
Finally the WÜSTHOF name, TRIDENT-Logo and city of Solingen as place-of- manufacturing are proudly etched onto every blade.
It takes more than 40 major manufacturing steps from forging to tempering, grinding and polishing until the final cutting edge is applied.
The formula X 50 Cr Mo 15 is proudly etched onto every blade.
The analysis of the WÜSTHOF steel alloy is as follows:
X = Surgical Steel
50 = 0.5% carbon (The carbon content is significant for the sharpness, edge retention and honing of the blade. It is indicated in 1/100 %.)
Cr = Chromium for no-stain properties.
Mo = Molybdenum contributes to the no-stain properties
15 = Contents of chromium in %
