This is just a quick note to say how pleased I am with the Chef's Choice sharpener I picked up from you a week or so back. It's renovated my favourite knife (a reasonable quality Sabatier) which, after almost eighteen years, had a couple of slight nicks in the edge. It's also put decent edges on the rest of my knives (some all stainless ones, not as good as the Sabatier). PW
